For good health, it’s important to eat fruit and veg of different colours. The colour in beetroot provides a powerful anti-oxidant which you only get from vibrant red or violet colours. Beetroot juice has been shown to be helpful in lowering high blood pressure. Nuts and seeds in small amounts are heart-protective.

2 tsp sesame seed

2 raw beetroot

2 apple

3 tbsp low fat natural yoghurt (1%)

1 tbsp reduced fat mayonnaise

cracked black pepper

5 spring onion, chopped

1 handful fresh coriander, (optional)

1 tbsp salted peanuts

Directions

1. Heat a non-stick frying pan over a medium heat and lightly toast the sesame seeds for a few minutes until golden brown. Set aside to cool.

2. Peel and grate the beetroots.

3. Grate the apples.

4. Mix the beetroot, apple and all the remaining ingredients in a bowl and serve topped with toasted sesame seeds.
