1 small (¼ cup) onion, diced
1 medium (½ cup) tomato, diced
1 tsp cumin powder
1 tsp coriander powder
1 tsp paprika powder
¼ tsp salt
1 tbsp water
300 g (10.6 oz) spinach leaf
50 g (¼ cup) sweetcorn, (canned)

Directions
1. Heat a large deep non-stick frying pan or skillet over a medium-high heat.
2. Add the oil, garlic paste, ginger paste, onion, tomato, spices, salt and water. Sauté for 2 to 3 minutes until thoroughly mixed.
3. Add the spinach and stir well. Reduce to a low-medium heat. Cover and cook for 10 minutes.
4. Uncover and stir well. Garnish with the corn.
