Light and crunchy spicy summer rolls are the perfect menu item for summer get-togethers and potlucks! This crowd-pleasing appetizer consists of crunchy fresh vegetables wrapped in rice paper sheets and dipped in a spicy sauce flavoured with ginger and chilli. Summer rolls are staples of Southeast Asian cuisines and can easily be whipped up at home as well. Simply slice your favourite vegetables like carrots, spinach, cucumbers (and even avocado for a heart-healthy fat!), then wrap the fillings into snack-sized rolls, and serve with a spicy and sour dipping sauce made of nothing more than lemon, ginger, sesame, and a sprinkling of chilli flakes.
